Okay, so I know it’s not really fall yet, but you know what? I had to wear a sweatshirt on my walk this morning so I’m pretty sure it’s close enough to fall to start adding pumpkin flavor to EVERYTHING.
That being said, how about some nut butter made with the lovely fall flavors of pumpkin seeds, pecans, maple syrup, and cinnamon? Sounds pretty good, no?
I used pumpkin puree in addition to the nuts and seeds, which makes this nut butter lighter than your typical peanut or almond butter. The maple syrup lends it a touch of sweetness, and can be adjusted up or down to increase or decrease the sweetness to your liking.
I chose to use Mary’s Gone Crackers Super Seed crackers. I’ve never tried Mary’s Gone Crackers brand before, although I have heard of them. I must say, they were awesome! This particular flavor of crackers is gluten-free, non-gmo, soy free, and vegan, not to mention packed with great, nutrient dense seeds. They’re pricey, but definitely delicious.
I seriously cannot wait for fall. I feel like such a hypocrite though because I know that ten minutes into winter I’m going to be whining about how freakin’ cold it is. Happens every year. Still, the lure of boots, scarves, and ridiculous amounts of pumpkin flavored treats is just too great to dampen my excitement at the present moment….
So if you’re like me, and want to get a jump on the season, start it off with a bang and whip up some of this delicious fall butter asap!
It took me about 10 minutes of blending until I had a consistency I was happy with, but I’m sure it will differ depending on what blender you’re using.
Some things I was thinking would make good add-ins include: cacao nibs or mini chocolate chips, maca powder, or shredded coconut. Let me know if you try something else that’s awesome – the possibilities are endless 🙂
