Easter Weekend Recap and an Easy, Low Carb Dessert

Hi!  I realize it’s now well past Easter, but I thought I would post a little recap of the festivities and also share a quick and easy idea for a low carb dessert.  Spoiler alert – it’s this Lemon Cheesecake-type dish:

I went home to my parents house for the weekend (it was sort of a long weekend because I only worked a few hours on Friday), and it was a lovely, lovely evening, which looked something like this….

Friday evening was spent relaxing, cuddling with my three favorite puppies in the world, and catching my dad up on the latest Game of Thrones Episodes.  He enjoyed the Purple Wedding so much that we had to watch that last ten minutes three times so that he could really appreciate the death of a certain someone….  (which, if you don’t watch GoT, you’re probably thinking that sounds kind of morbid and cruel, but trust me, this guy deserved it).

Then,  Saturday morning I prepared an Easter appetizer for the next day.  As deviled eggs are one of my favorite appetizers, they were of course, on the menu, but this year I made them extra Easter-y by dying the whites before filling them.  Family members were appropriately impressed.

photo 2You just soak the whites in a mixture of food coloring and water for about 15-30 minutes depending on how dark you want them, and then you drain them on a paper towel and fill as usual…

IMG_5864Aren’t they beautiful?  Call me crazy, but they tasted better because they were so fun looking.

After the eggs, I made my fun, easy, Low Carb Dessert, which was a Lemony Cheesecake type thing.  I say “cheesecake type thing” because it wasn’t thick and rich like a cheesecake, but it was made with cream cheese, so it had sort of a similar taste, but it was a lot lighter, which honestly suits me just fine.  I like eating dessert and not feeling a bit queasy/bogged down, so this was perfect.

Low Carb Lemon Cheesecake, (healthy)Vittles&BitsIt was also about the fastest and simplest dessert I’ve ever thrown together. Here’s how it went:

Low Carb Lemon Cheesecake-type Thing

Yield: 8 servings

Serving Size: 1 slice

Low Carb Lemon Cheesecake-type Thing


  • 1 (0.3oz) package of sugar free Jell-o, I obviously used Lemon, but any flavor will work just fine
  • 1 (8oz) package of 1/3 less fat Cream Cheese, softened
  • 1 cup boiling water
  • 1 ready-made, reduced fat pie crust (optional, depending on how low carb you want to be)
  • Reddi Whip (again, optional, but hey, why not!)


  1. In a mixing bowl, mix together the sugar free jello packet and the boiling water and mix until the powder has dissolved.
  2. Stir in the cream cheese, and whisk together well until the lumps have disappeared. This took a while but you want it to be as smooth as you can get it.
  3. Pour into the ready-made pie crust and cover. Carefully transport to the fridge and allow to chill until set (I let mine chill overnight).
  4. When you cut it to serve, add some Reddi Whip on top for extra deliciousness 🙂


Without Crust: Kcal = 75 FAT = 6 grams CHO = 1 gram PRO = 3 grams

With Crust: Kcal = 175 FAT = 10 grams CHO = 16 grams PRO = 4 grams

This was really nice and light, but still a good way to indulge in something sweet after a delicious Easter meal 🙂

Easter Sunday followed the typical schedule of church, followed by basket hunting – yes, I still make my mom hide an Easter basket for me.  I happen to be a basket hunting champion.  I don’t want to brag or anything am so good at basket hunting that I found my own basket and Jenn’s basket in just 15 minutes. I basically have a PhD in basket hunting 😛

It was so nice out on Sunday that I was able to bask in all my basket hunting glory out on the back porch for an hour or two before heading to my Aunt’s for Easter dinner.

photo 5Obviously these pale legs haven’t seen sun in ages, and they were promptly burned, as per usual.

So there you have it, a great Easter weekend.  I know it’s been a while, but
